1 lemon
1 orange
1 bottle of white wine
2 l of water
140 g light liquid honey (about 1/8 l)
½ teaspoon of black peppercorns
½ teaspoonful of cloves
4 seeds of cardamom
2 star anise flowers (star anise)
1 bay leaf
6 beautiful peeled pears
200 g of dark chocolate
50 g grated almonds

Steps

Step 1

Preheat the oven to 200 ° C. Squeeze the lemon and orange and pour this juice along with the white wine, water, honey, peppercorns, cloves, cardamom, star anise and bay leaf into a large saucepan.

2nd step

Gently add the pears, so that they are completely covered and do not touch the bottom of the pan. Cover and bring to a boil, then reduce the temperature until the cooking juices simmer gently.

Step 3

Toast the almonds in a frying pan until golden brown, and pour into a plate to cool.

Step 4

Cook the pears for 5 minutes, then gently put in a cup. Cover with juice, covering them. Cover and chill - preferably, overnight.

Pass the remaining cooking juice to the Chinese, then pour it back into the pan. Let reduce on high heat to obtain a syrup, and reserve in the fridge until serving.

Chop the chocolate, then place in a container and melt in a bain-marie.

Step 5

Dip the pears first in the melted chocolate, then pass them in the almonds. Arrange on parchment paper and chill for about 30 minutes while the chocolate solidifies.

Arrange them on plates and top with syrup. Serve without waiting.
