ingredients

4 frozen salmon steaks of 150 g
25 g coarse salt
25 g caster sugar
Chiseled basil
Chopped chives
Some dill sprouts
Olive oil
250 g of quinoa
1 egg
20 g of potato starch
1 carrot
1 red pepper
2 small white onions
100 g of rinsed mesclun
40 g of fresh cheese
1 lemon

Steps

Step 1

The day before. Thaw the salmon, sponge it out. In a bowl, mix coarse salt, sugar and herbs (except dill). Spread on the fish. Shoot and book cold.

2nd step

Prepare the patties. Slice pepper and onions, grated carrot. Cook and drain the quinoa. In a bowl, mix 1/3 of the quinoa with the egg and starch. Add remaining quinoa and vegetables. Mix, salt, pepper. If necessary, add a little starch. Heat a pan with a drizzle of oil. Shape the patties (ø 6-8 cm), return them 4-5 min on each side. Drain on paper towels.

Step 3

Prepare the salmon. Take it out of the fridge, rinse it, sponge it out. Slice it thinly, sprinkle with dill, drizzle with oil.

At the moment of serving. In a bowl, mix the fresh cheese with lemon juice, salt and pepper.

Dress on 4 plates quinoa cakes, salmon, a little mesclun and sauce.
