Galactose is a simple sugar, an essential glyconutrient. He composes lactose in combination with glucose. At the time of digestion, in the small intestine, lactase breaks down lactose into two sugars, glucose and galactose. Glucose provides us with energy while galactose contributes to the building of nerve tissue. Transported in the blood to the liver, it is metabolized and converted into glucose. It is found in milk, it plays a big role in infant feeding. It appears that athletes taking a drink containing galactose are less efficient than those who use a mixture of glucose and galactose. The liver would convert galactose to glucose too slowly during intense exercise, the energy released is not enough.

Galactosemia
It is a set of rare genetic diseases: the level of galactose is too high in the blood due to lack of absorption. High levels of galactose in the blood cause liver damage, growth and learning disorders. It is treated by a dietary diet without galactose.

The diet without galactose
This is to remove all foods containing galactose free or bound to other sugars. We must therefore eliminate foods containing lactose: milk and dairy products. It is also necessary to remove offal and egg yolk as well as soya and its derivatives. Cocoa and some fruits and vegetables are to be eliminated from the diet.
