  • 2 zucchini
  • 3 tablespoons guacamole
  • 3 tablespoons hazelnut oil
  • 2 tablespoons roasted pine nuts
  • 2 teaspoons lemon juice

Steps

Step 1

  • Wash zucchini and slice thinly with a mandolin.
  • Cook for a few minutes (they should stay crisp) in boiling water. Book.

2nd step

  • Prepare the seasoning by emulsifying the guacamole with the hazelnut oil. Sprinkle with lemon juice and season with salt and pepper.
  • Brown ravioli 5 minutes over medium heat in a non-stick pan
  • Arrange your zucchini, season with guacamole sauce and sprinkle with pine nuts and ravioli.
