ingredients

1.2 kg of quinces
The juice of 1/2 lemon
900 g cane sugar
1 tbsp. to c. cinnamon
1/2 vanilla pod
1 pinch of ground cardamom

Steps

Step 1

Peel, cut in 4, remove the hearts of quinces.
Lock the hearts in a gauze, close with a string.
Cut the meat (1 kg) into cubes of 1 cm.
Put them in a jam pot, pour boiling water just up, boil 15 min.

2nd step

Add sugar, packet of hearts, lemon, grains taken from the vanilla bean, cinnamon and cardamom.
Cook over low heat for at least 30 minutes, stir often.

Step 3

Take away the hearts.
Check the outlet, put in pots (read the box opposite).
Garnish with baked apples or pears.
