6 peaches from here
500g of sugar
50 g fresh ginger
1 teaspoon of sweet spices (cinnamon, clove, lemongrass)
1 lemon juice

Steps

Peach jam with sweet spices and ginger

Rinse the jars of jam and then dry them upside down on a clean cloth without wiping them.

Wash, peel and stone peaches from here, cut into small pieces and crush them lightly. Peel the ginger and cut into thin julienne.

Pour the fruits and julienne ginger in a large casserole with a thick bottom, sprinkle with sugar and macerate until complete dissolution of it.

Bring the mixture to a boil. Add the teaspoon of sweet spices, the lemon juice and cook on high heat for about 5 minutes stirring continuously with a wooden spoon. Skim the end of cooking and fill the pots with the still hot jam. Close the jars, turn them over and let them cool.
