5 juniper berries

2 bay leaves

75 g of sugar
5 dl of rapeseed oil
25 cl of vinegar

Steps

Herring marinated in oil

In advance: heat vinegar, sugar, cloves, juniper, cayenne and carrots sliced ​​in-ronds. At the first broth, remove from heat, add oil. Let cool.

Assemble : remove the carrots from the spider. In each jar, layer layers of herring, carrot, finely chopped onion, 1 bay leaf, mignonette; repeat until you exhaust the ingredients; end with herring.

Finish: pour vinegar oil and herbs. Close. Let macerate for 3 weeks, ensuring that the herring remain immersed; if necessary, add oil.
