250 g cake flour
2 eggs
2 tbsp. to s. of milk
25 g of sugar
100 g of soft butter
1 lemon
2 tbsp. to c. orange blossom
1 tbsp. to c. shave of ground salt flower

Steps

Step 1

The day before: mix cake flour, sugar, zest of grated lemon and salt flower ground in a salad bowl; dig a hole in the middle; pour in eggs, milk, orange blossom, mix by hand.

2nd step

Add the chopped butter, knead by stretching the dough and folding it as if to enclose air. When it is very elastic, cover the salad bowl with a damp cloth, let rest 12 hours in the fridge.

Step 3

On a floured surface, spread the cold paste with a roll of 5 mm thick. Cut out lozenges of 5 cm side. Incise each perpendicular to a point, pass through the slot at the opposite angle. Immerse the buggies in the fryer preheated to 180 ° C: they must inflate, brown, rise to the surface. Take them out to the spider, dry on a cloth, enjoy hot powdered icing sugar.
