150 g of dry apricots of "soft" quality
1 l pasteurized whole milk
50 g brown sugar
200 g durum wheat semolina
1/2 cuil. to c. of bitter almond extract For fresh apricot coulis
300 g ripe apricots
4 tbsp. to s. liquid honey
1/2 lemon juice

Step 1

Cut the dried apricots into small pieces. Bring milk and brown sugar to a boil; pour semolina into the rain, pieces of apricots, almond extract; thicken 5 minutes on low heat. Pour the thickened semolina into glasses leaving a space for the coulis. Let cool.

To vary
